Vegetable Lasagne

This is really yummy, I used Turkey mince because of the lower fat content, but you can use beef or pork mince or leave out the mince altogether.

Ingredients:
500g Turkey mince
1 Large onion
2 cloves of garlic
Half a capsicum
Basil leaves
Zucchini
Eggplant
Capsicum, whole red and green
Mushrooms
Tomatos
Baby spinach
Half a cup of ricotta, crumbled (or feta)
Jar of sauce 700g
Powderd stock
Method:
Slice vegies thinly
Grill the vegetables, excpet for the tomato

Put the grilled vegetables aside
Sweat the onion and garlic and half a capsicum in a large pot
Place mince into pot, brown until all liquid is gone
Put in some powdered stock
Add salt and pepper
Add some basil leaves and oil
Simmer the sauce for about half an hour


Get a baking dish and put a little bit of sauce on the bottom
Layer Zucchini
then eggplant
then capsicum
then tomato
then mushroom
then baby spinach
then sprinkle some crumbled ricotta or fetta
then spoon some more sauce and repeat until all ingredients are used



Place in preheated oven at 180c, fan forced, but keep an eye on it, it wont take long as it just needs to heat through.



Enjoy on its own or with some crusty italian bread, yummy!

Vegetable Curry

This curry was adapted to one I found on the net one day, I made it with just vegies, but you can easierly make it with chicken or beef. Also you can add potatos or any other vegies as well. Since I only used vegies I hard boiled two eggs and had that for my protein.



Ingredients:
1 large onion
2 cloves of galric
3 TABLESPOONS of curry powder
2 CUPS of vegetable stock
200mL sour light cream
375mL light evaporated milk
1 tsp of Ground Cumin
1 tsp of Ground Cardamom
1 tsp of Ground Turmeric
1 tsp of Ground Paprika
1 TBS of oyster sauce
6 eggs* optional
Carrots
Celery
Mushrooms
Capsicum, red and green
Cauliflour
Silverbeet or spinach
2 hard boiled eggs (per person)* optional

Method:

  • Sweat onion and garlic in a small amount of oil
  • Place curry powder and spices into the pot
  • Pour in chicken stock, sour cream and evaporated milk


  • Add oyster sauce
  • Bring to the boil
  • Add the vegies

  • Simmer, you may need to add more water

You can serve this on rice, or if your being carb conscience, serve with steamed green beans, if you want protein but not chicken or beef, hardboil two eggs and slice and serve ontop.

Tiramisu

This Tiramisu is so simple and delicious!!



Ingredients:

2 CUPS black coffee
½ CUP orange juice, OJ, (or liqueur)
3 eggs separated
1/3 CUP castor sugar
250g mascarpone
300mL thickened cream
1 large packet of sponge fingers
Chocolate for shaving (I use cadbury!) approximately 100 grams
1 punnet of strawberries

**NOTE** If you are making this for people who dont like coffee, you can substitute the coffee with chocolate milk

Method:

Combine coffee and OJ in a shallow dish

Shave chocolate

Slice strawberries thinly and place in a bowl with 2 tablespoons of Orange juice

Beat egg yolks & sugar in a large bowl until pale and thick.

Fold mascarpone and whipped cream until just combined

Beat egg whites in a medium bowl, until soft peaks form




Using a metal spoon, gently fold eggwhites into mascarpone mix.

Dip biscuits into coffee mix, dip quickly so they dont get too soggy

Layer biscuits, then mascarpone mix, then strawberries, then cream, then shaved chocolate and repeat.

Chill in fridge

Serves: A LOT
